PASTA PRIMAVERA
In honor of spring!

1 cup uncooked pasta
1 tablespoon vegetable oil or olive oil
½ onion, chopped into small pieces
½ carrot, cut into thin strips
½ cup asparagus or green beans, cut into 1-inch pieces
½ bell pepper, cut into small pieces
1 tomato (or a handful of cherry tomatoes), chopped into pieces
2 tablespoons vinegar or lemon juice
1/3 cup grated cheese, such as Parmesan
Salt and pepper to taste

Bring a large pot of water to a boil. When water boils, add in pasta and cook according to directions on package. When the pasta is done, drain in a colander.

Heat the oil in a second pot or pan, and add the chopped carrot and onion. Cook for 5 to 7 minutes, stirring occasionally. Next, add the asparagus or green beans, bell pepper, tomato, salt and pepper. Cook until vegetables are tender, about 5 minutes. Other spices can be added if you have them at home, such as ½ teaspoon garlic powder, dried parsley, or dried basil. Mix them into the vegetables while they cook.

Add the cooked vegetables into the pot with the drained pasta. Mix in the vinegar/lemon juice. Sprinkle in the cheese and enjoy!

We just learned about a documentary on the Food Network called Hunger Hits Home It’s a documentary about childhood hunger in America presented by the Food Network and Share Our Strength’s No Kid Hungry Campaign. (Share Our Strength supports Food For Free through a grant from its Boston Taste of the Nation fundraiser.)

The program promises to “take a first-hand look at the crisis of childhood hunger in America through the eyes of the parents, children, activists, educators and politicians on the frontlines of the battle.”

It will be really interesting to see how this issue—that we at Food For Free spend a lot of time thinking about—will be represented.

Hunger Hits Home premiers April 14 at 8pm on the Food Network.

Food For Free’s Home Delivery program currently brings food to 60 low-income Cambridge residents who cannot access food pantries due to illness or disability. Each month, we deliver 40-45 pounds of food to seniors and people with disabilities, so they can cook their own food.

Beginning last November, recipients started receiving a healthy recipe along with their monthly delivery, featuring one of the items from the box.

Home Delivery Driver Simon has been picking one item to highlight from the box each month, focusing on items that may not be familiar to everyone, such as collard greens and turnips.

We try to pick recipes that are healthy and easy to prepare, especially because movements such as chopping or peeling can be difficult for some of our clients. Our goal is to provide simple ways to prepare unknown foods, increasing the chance that recipients will cook and eat a wider range of fruits and vegetables. This can lead not only to healthier diets, but to less wasted food, as well.
